Master Chef & creator of all food - married to Javier
Eva is the key to the success and future of our business. She is the recipe creator and kitchen manager. The flavors, the secrets of our food and the creativity behind our tamales comes from Eva. She has been making tamales for over 20 years since arriving to the U.S. as an undocumented immigrant. Now a legal resident, Eva is an example of what immigrants can contribute to a community and our local economy. Eva can be seen making tamales through our windows at the shop. Eva is married to Javier and has two children, one of them being Osbaldo, co-owner.
Owner & co-founder - married to Osbaldo
Dennis grew up in Seattle and is a Ballard-native. After working for over 7 years at Seattle Children's Research Center as a cancer Research Scientist, Dennis decided to pursue a career in brewing. Dennis now works at Hellbent Brewing as a brewer. Dennis is an avid skier and masters the snowsports. Loves to go on backpacking trips and enjoys long bike rides in the summer sunnier days in the PNW. Dennis and Osbaldo are proud parents of two pups who demand more attention than the business itself.
Maria has been a member of our team since 2018. Maria currently serves as a member of our delivery team who brings you tamales to your doorsteps. Before the pandemic, Maria used to help us run booths at local food summer festivals. Besides delivering tamales to your door, Maria also plays a role of Social Media Specialist at Frelard. Next time you connect with us on one of our social media channels, it will very likely be Maria who you will be corresponding with. Maria works full-time for Lutheran Community Services NW as a Housing Navigator supporting the unhoused community.
Customer service rep & delivery team
Joel has been a part of our team since 2019. He started with Frelard as a customer service rep running our booths at weekend markets and local breweries. Since the pandemic started, Joel's role switched to be part of our delivery team and also helping us run our window where he serves you our tamales. Joel is known for his respect of others and positive attitude with the team. Joel joined Frelard after moving to the PNW from the East Coast.
Tamale production & window service team
Blanca has been a part of our team since 2018. Blanca comes with many years of kitchen experience working in various food establishments in the Eastside. She is a crucial part of our tamales production team as she keeps things moving by mixing the masa, heating oils, dishwashing and tying tamales. You might also run into her at the window when coverage is needed and I am sure you won't forget her sweet and kind human nature. Blanca is a mother of three and lives with her family in the Eastside.
Tamale production assistant & customer service rep
Melissa has been part of our team since 2018. She comes with years of experience in various food establishments throughout Washington State. Melissa is the pinch of astronomical energy in the shop: always laughing, greeting customers with a tsunami wave of energy and always keeping the production line moving. Melissa started at Frelard helping with booths and windows but transitioned to become one of Eva's right hands. She has mastered the production process and is instrumental in keeping a healthy stock of tamales. Melissa lives in South King County with her cute puppy.
Window customer service rep
Mel joined our team in late 2020 as window customer service rep. They have quickly learned how to run the steamers to keep the tamales going and to keep our customers happy. When asked to write a brief bio about themselves, this is what they responded: Mel is a student and writer with a passion for delicious flavors and helping others. They love to experiment in their kitchen at home and have been working on bread recipes lately. Mel also loves dancing, karaoke, and more recently taking walks around the state’s beautiful parks.
Assistant chef & handyman - married to Eva
Javier comes with over 25 years of kitchen experience. A former cook at Azteca Mexican Restaurants and the Bellevue Convention Center, Javier provide key kitchen assistance to keep the tamale production going. Equally important, Javier is a handyman who fixes things that break at the shop. Before working in kitchens, Javier worked in the fields of eastern Washington picking fruit. A farm worker since his youth, Javier moved from the farm to the city in the late 1990s. Javier is married to Eva and is the father of Osbaldo, co-owner.
Owner & co-founder - married to Dennis
Osbaldo was born in Mexico and moved to the U.S. at the age of 11. Osbaldo is a former high school social studies teacher who worked in three different school districts working with students at-risk and unhoused families. Osbaldo also worked for Sen. Patty Murray as a constituent services representative before landing at the Department of Neighborhoods at the City of Seattle. Osbaldo, like his mother, was undocumented for over 9 years before becoming a legal permanent resident and now citizen. Osbaldo loves to camp and backpack during the summer months and enjoys brewery hopping with Dennis and friends.
Customer service rep & tamales production team
Marlen has been a member of our team since 2018. You are familiar with her because she is one of our main customer service reps who is usually helping you at the window. She is also a huge component of the production line of tamales by helping tie and pack tamales. She is known for her friendly and quick service, Marlen is our window expert. Marlen has one young daughter with her partner and lives in Snohomish County.
Customer service rep & delivery team
Nat joined our team in 2019 and also plays multiple roles in our business. They switch between deliveries to window service, Nat has shown us their ability to master the skills necessary to assist the shop in different ways. Nat loves the arts and before the pandemic, they were teaching arts to young people. Nat is a friendly face at the window and while working behind the scenes. Nat is working to complete their MA in couple and family therapy with an art therapy specialization.
Online orders & delivery coordinator
Miguelina has been a part of our team since early 2019. Miguelina started at Frelard as a booth operator but also provided kitchen assistance helping with salsa and sauce production. When the pandemic started, her roles switched and took over our online orders & delivery coordination. She is the person responding to all online orders and helping our delivery team get to your door. Miguelina is a mother of two and lives with her husband in Snohomish County.
Arely joined the team in late 2020. She works early days doing food prep like cutting the bell peppers used in our vegan fajita veggie tamales and peeling carrots used in our pickled veggies fixing. Arely has years of experience working at high-end restaurants around the Puget Sound and brings her excellent food prep skills to the team. Arely has a strong love for the outdoors and enjoys nature activities with her family and friends.
Irimar joined the team late 2020. Very quickly she mastered the skills needed to help at the production table by learning to tie and organize tamales. She comes with years of experience in working at other restaurants. She wrote this about herself: I am a happy person, I like to help and work in a team, and I have always thought that there are no more limitations than the ones we put on. I am one of the people who thinks that each beginning is a new opportunity to do things better, that is why each day has a new dawn and with it a new beginning.
